Thanks for your comments...I am gald to see that your husband is going to do the ED with you : ) it was way easier when my husband did the diet with me as he and my son like to eat not so healthy foods....most of which I really don't struggle with except when he gets in a 'I'm hungry but I don't want to eat in front of you' or 'I got us some wine'....he's supportive for the most part but he does like his junk...and I swear they (husband and son) have worms 'cus they are always hungry!: ) Keep the faith!

I had a cup of Dandelion Root this morning. I really like the flavor. My husband just went through treatments for testicular cancer, so I was thrilled to read the benefits where cancer is concerned! Next I'm going to try Chicory...I love the chicory coffee from New Orleans, so I'm sure I'll like it too. Colin posted a link about chicory benefits.
I'm on Day 11! Just weighed and I'm down 3 lbs. this morning. I have to be very careful though...I could put that back on in 1 meal! I'm doing the Lotte Berk Method for exercise and it's awesome (Day 5 of that). I'm learning about muscles I didn't know were there! Simple exercises, but brutal!
Hickory is a very small town with no Fresh Market or Whole Foods, but Charlotte is only a little over an hour away. We moved here from Memphis about 4 years ago and Memphis has plenty of places to shop, but we love the "smallness" of Hickory. Very peaceful! The little health food store we have here is pretty nice though and they are willing to order anything.

Thanks for the comment. Sorry for the delay in response. I have not checked my page for a few days. With 3 kids it can get busy! Having the kids around and all their food has not been a problem. My daughter loves to make cookies and other treats, and the smell is always tempting, but I feel so good now it just would not be worth it to me to indulge, even once! I used to be easily flustered and have a short fuse at home, especially when the house started to get disorganized. Now it is so much easier to put things in perspective and not get worked up about things. I think because my blood sugar is more stable. The most challenging day for me was on my sister's birthday. She had a chocolate cake made by a local baker who is famous for wonderful cakes. Everyone got a piece and went on and on about how moist, how good, etc., etc. it was. It was painful. I really felt like crying. But I thought I have come too far to take orders from a piece of cake. I decided if I wanted a piece all that bad I could have one at the end of the 21 days. It has been almost 30 days and I don't want a piece. I love eating this way!
How is the diet going for you? Have you had any challenges?
